Ancient creatures (dragons, wyverns, hydras) seem to be content just hanging out, much like the stone dragons of yore.

The Anor Londo creatures are mostly focused on protecting Gwyndollin's illusion, as they themselves are a part of it, with a few exceptions.

Here I'm also including the giants in Sen's Fortress, most bosses and other powerful, non-chaos aligned creatures. Only very powerful souls can properly fuel the Flame.

Gwyn's Boys (great name idea, by the way), including Black Knights, are a sort of test for incoming undead.

Great human heroes of old like Havel I'm including in this group. In this group I'm also including dogs, rats, leeches and every other creature that does not possess higher brain functions. They aren't trying to stop you as much as they're attacking anything they don't recognize.

The random hollows you meet around are just mindless beasts, echoing what they did when they used to be conscious.

I may be missing some here so feel free to add to my thoughts. There are a few different "factions", of sorts, as I understand this world.

He's just a madman who attacks you at first sight like all other hollows. It's likely he has zero interest in anything. Gwyn himself has been burnt by the flame and has gone hollow (or whatever happens to you once you become a Lord of Cinder). I'm not really sure what Nito wants or cares about, it's possible he doesn't care either way like Seath.

Seath probably only cares about his own skin and doesn't want you to kill him. The Witch of Izalith was likely just driven mad in her transformation by the chaos flame, or if not she's simply uninterested in aiding Anor Londo who the demons fought a war with and lost. The Four Kings for instance almost certainly want an Age of Dark to come as they have been consumed by the Abyss. It's not entirely clear what interest the four lords have in all of this and it probably varies greatly depending on each one's character.
